MacIntyre Refiner/conche replaces the traditional or classic line of making chocolate, i.e mixer, two-roll and five-roll refiners and conche machines. Moreover, for small-scale manufacturers it can also replace melters for cocoa liqour and cocoa buttter (fat), as well as makes possible to save on pumps and conveying systems. The Refiner/Consch is the universal machine for the production of chocolate and other masses with fat contain from 24 to 60%. This unique machine incorporates the traditional method of conching and grinding at the same time. The machine consists of a double jacketed cylinder with a serrated inside of lining bars. Spring-loaded movable grinding bars, or so-called scrapers, break the particles as they rotate. The conching process takes place in two phases: dry and liquid phases. The dry phase is conducted during the grinding of the mass, when unpleasant odors and flavors are removed, and after grinding, when the pressure of the grinding bars is released. In this phase the system is converting to liquid conching phase, where to achieve a caramelized flavor and Flavor development by Maillard Reaction The system is a batch production system for the product. MacIntyre allows you to produce real chocolate. It gives you the possibility to conche the chocolate. Moreover, the MacIntyre system allows you to use coarse solids, such as cocoa nibs, crystal sugar and even whole nuts. Liquid ingredients can be loaded into refiner/conche even in solid and crushed condition. I.e. there is no need to use separate melters or sugar grinders, which in turn has its own disadvantages.
