Many chocolate manufacturers today are in need of a compact chocolate production system that is more flexible in terms of making different types of chocolate mass, at the same time more affordable and still has the same high quality of the final product.
One such system is the universal Refiner/Conche from the Scottish manufacturer MACINTYRE CHOCOLATE SYSTEMS. The machine consists of a double-jacketed cylinder with toothed lining bars and spring-loaded movable grinding bars, or so-called scrapers, inside.
The principle of the refiner/conche is to mix the ingredients, then gradually grind the mass to the required fineness and finally conche or liquefy the product.
